Healthy Veggie and Potato Soup

  • 2 containers of organic veggie stock
  • 1 large onion chopped or minced in food processor
  • 3 cloves of garlic, minced
  • 1 tsp of fresh ginger, peeled and minced
  • 1 tsp of fresh thyme
  • 1 tsp  of fresh basil
  • 1 tsp of fresh sage
  • 1 tsp of fresh oregano
  • 1/2 tsp of fresh rosemary
  • 1/2 tsp of sea salt
  • 4 medium red potatoes, cubed
  • 5 baby bok choy, cut into pieces
  • 2 medium carrots, peeled and diced

Preparation:

Bring the vegetable stock to a boil.  Add all the ingredients.  Bring back to a boil and then simmer until potatoes are cooked.  Turn off heat.  Let stand for 10 minutes.  Can add any source of protein for a complete meal.  Enjoy!
